CUUL 1130 Fundamentals of Catering Operations

Introduces the fundamentals of Catering Operations. Topics include: set up kitchen operations, kitchen operational procedures, equipment use, banquet planning and set-up, recipe conversation, food decoration and safety and sanitation. Students will be introduced to the preparation of a wide variety of quantity foods.
